  1. Saute sliced onions in a medium-size pot over medium-high heat for a few minutes or until translucent.
  2. Reduce to medium heat. Add minced garlic to the pot and cook for 30 seconds.
  3. Add chicken broth, salt, pepper, turmeric, cayenne, and spinach (optional) to the pot. Bring to a soft boil over high-heat.
  4. Rinse eggs and crack them individually into the pot carefully.
  5. Reduce to medium-low heat, stirring the soup occasionally for a couple minutes.
  6. Remove the pot from heat.
  7. Enjoy your delicious, warm soup. Garnish with sliced green onions for a pop of color and flavor.
