Ingredients
- 4 cups of chicken broth
- 1 onion sliced in wedges
- 2 garlic cloves minced
- 4 cage-free eggs
- Dash of salt and pepper
- 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup of spinach (optional)
- Sliced green onions (optional)
Instructions
- Saute sliced onions in a medium-size pot over medium-high heat for a few minutes or until translucent.
- Reduce to medium heat. Add minced garlic to the pot and cook for 30 seconds.
- Add chicken broth, salt, pepper, turmeric, cayenne, and spinach (optional) to the pot. Bring to a soft boil over high-heat.
- Rinse eggs and crack them individually into the pot carefully.
- Reduce to medium-low heat, stirring the soup occasionally for a couple minutes.
- Remove the pot from heat.
- Enjoy your delicious, warm soup. Garnish with sliced green onions for a pop of color and flavor.
